Quick Caesar salad

Caesar salad as a side dish without croutons and anchovies - fresh parmesan it comes very close to the original.

Ceasar Salad

Good to know:

A Caesar salad is not what you often get served in restaurants draped with chicken breast. This is the German version. If I ever post a recipe for it, I'll link it. Here is the quick version as a side dish. Please make sure that all ingredients for the dressing are at the same temperature.

For 4 servings

2 large romaine lettuce hearts
1 clove of garlic (Demeter, Spain or similar good quality)
1/4 tsp salt
1 tsp Dijon mustard, or Düsseldorfer Löwensenf hot
2 tbsp lemon juice
2 tbsp super good olive oil
3 tbsp good canola oil
60g parmesan, freshly grated
1 tsp sugar
salt, pepper

Finely crush the garlic with the salt and then mix with the mustard and lemon juice. Pour into a bowl.

Slowly add the oil(s) and whisk to form a creamy emulsion. Season to taste with sugar, salt and pepper.

Grate the parmesan and wash the lettuce.

To serve, mix the salad with the dressing and sprinkle with grated Parmesan. Mix and distribute on plates or bowls.
