Fig leaf syrup
2 organic lemons
1kg sugar
25g citric acid
25 fig leaves
1 litre of water
Wash the lemons and cut them into slices.
Boil the water, sugar and citric acid until the sugar has dissolved.
Wash the fig leaves. Layer the lemon slices and flowers in a clean container and pour the sugar syrup over them. The syrup should still be hot, but never boil, otherwise you will kill the flavour.
Cover the syrup and leave to infuse at room temperature for 3 days. Strain first through a fine sieve and then through cheesecloth.
Boil the syrup and pour it hot into clean bottles, preferably boiling the bottles first. Seal tightly and store in a cool, dark place. It feels like it lasts forever.
