Bacon powder

With tapioca maltodextrin you can make a powder from fatty masses or oils when stirred together. I had fried bacon crisp, finely chopped in the blender then powdered with maltodextrin.

50g bacon
25g tapioca maltodextrin

Of course you can also use ham or bacon. Stir together with tapioca maltodextrin and mix well. This is best done in a blender, I just mixed it in a high mixing cup with a spatula.

In the mouth it becomes liquid again and tastes and feels like bacon grease because it reacts with water - in this case saliva. The powder is ultra-light and gives lots of volume. 25g of it is quite a lot. So light as dust and also makes quite a mess in the kitchen if you handle it like flour or starch. So be very, very careful.

Makes a great topping for scrambled eggs or you can use it to flavor dishes. So as a flavor enhancer.
