Chinese BBQ Sauce
For 4 servings
2 cloves garlic - alternatively 5g garlic powder 1 onion 2 tablespoons oil 50g sugar 100g ketchup 50g hoisin sauce 50g oyster sauce 30g honey 15g ketjap manis 5g soy sauce 2,5g five spice powder 2,5g white pepper 5g starch 1/2 cup pork broth Little chili or cayenne 5 drops liquid smoke (optional) - but makes a difference. e.g. from matjes-hering.de
Chop onion and garlic finely, saute in oil. Mix all ingredients and boil them. Flavor with Liquid Smoke.
You can puree the sauce.
Put everything in a screw-top jar and refrigerate until ready to use.
I heat it lukewarm for eating.
