Coffee Cocoa Rub
30g freshly ground coffee beans
20g cocoa
50g muscovado sugar (brown cane sugar)
15g salt
10g freshly ground pepper
10g Cheyenne pepper
Grind the coffee beans and mix all the ingredients.
Rub the meat first with olive oil and then with the rub.
Tip
Don't sear meat too hot so the sugar doesn't burn too quickly.
