Japanese curry spice

Similar to ready bought Gaban or S&B curry, but based on a recipe from @norecipes.

20g turmeric
4g cumin
2g coriander seed
10g orange peel (dried)
5g fenugreek seed
5g fennel seed
4g cinnamon powder
4g cayenne pepper
3g garlic powder
3g ginger powder
3g dill
2g cardamom
2g clove
2g star anise
2g sage
2g thyme
2g nutmeg
2g black pepper
2g bay leaf
15g neutral oil

In this case, take all the spices in dried form. Weigh them and put them in a grinder (electric coffee grinder) and grind them finely. Unless you already have everything in ground form.

Mix everything well and heat the oil to medium heat and add the spices. Stir for about 3 minutes until the spices are fragrant and have absorbed the oil.

Let the mixture cool to room temperature and transfer to a screw-top jar.

Use the mixture to season rice or curry dishes.
