Japanese egg salad

Also great as a spread for sandwiches, this egg salad.

Japanese Eggsalad

4 eggs 30ml dashi (instant) 1 tbsp dijon mustard 100g mayo 1 tbsp lemon juice

Boil the eggs hard and chop them finely. Mix the chopped eggs with mayo, dashi, mustard, lemon juice and season with salt and pepper.
