Espuma smoked cauliflower

Now that's something out of the ordinary. Who smokes vegetables?

1 cauliflower (or the leftovers from the cauliflower steaks)
1 cup of cream
1 drop of smoke oil (taste and try how much you like)
salt, pepper, muscat

Boil cauliflower cut into small pieces, strain, puree with cream. Season with salt, pepper, smoke oil and nutmeg. Whip up with a hand blender. Strain through a sieve and pour into the siphon preheated in a water bath. Shake the ISI bottle, make sure the contents are on top, so if you turn the bottle upside down, then froth. Please test on a small plate first, this can be very splashy if you don't have much experience. Practice with cream, it's very easy.

Attention, the mass must be liquid like cream, otherwise you mess up in the syphon. And keep the siphon always nice down.
