Pasta tonno
2 onions
2 anchovy fillets
2 garlic cloves
1 tbsp capers
4 tbsp olive oil
4 tsp tomato paste
1 can tuna in brine
2 small cans pizza tomatoes
1 tsp sugar
400 g penne or other pasta
arugula for decoration, freshly grated parmesan cheese
Chop the onions and garlic and sauté them over low heat in olive oil with the anchovies. Now add the tomato paste, then the tuna and tomatoes and 2 cans of water. Season with a little salt, sugar and pepper and simmer for about 20 minutes. Taste.
Cook the pasta according to package directions, add it to the sauce dripping wet and top with arugula and parmesan.
