Chocolate noodles with caramelized citrus fruits
Noodles
175g water 2g agar agar
85g white chocolate 15g liqueur (coconut, amaretto, vanilla or whatever you like)
Caramelized fruits
2 mandarins 2 blood oranges 2 tbsp sugar 1-2 dashes vanilla paste 1 star anise 1 tbsp amaretto 1/2 pomegranate 50g butter 3 tbsp hazelnut brittle or almonds
First, make the chocolate noodles. Boil the water with agar agar. Add chocolate and liqueur. Melt the chocolate in the mixture over low heat and draw up the mixture in a syringe. Squirt the mixture into an aquarium tube and place the tube in a tall container of cold water. Ends up, of course. I clamp them together with a clothespin. Let agar agar do the work, it only takes 5 minutes and the noodles are ready.
Use the syringe again to maneuver the noodles out of the tube and onto the plates.
For the fruit, fillet both and catch the juice. Caramelize the sugar, add the fillets, vanilla, star anise and liqueur and juice. Reduce a little and pull the pot off the heat. Take the fruit out of the broth.
Remove the pomegranate seeds and add them to the fillets.
Stir the cold butter into the broth with a whisk.
Just before serving, heat the broth, take it off the heat, add the fruit and taste.
Serve with the pasta and sprinkle with hazelnut brittle.
