Oil powder

You can do some pretty fun things with tapioca maltodextrin. The stuff turns greasy masses or oils into a powder when stirred together. You can season the powder and use it as needed. I thought that was a good idea to use in a hot air fryer to bind the seasonings to the fries.

Ölpulver

50g oil
25g tapioca maltodextrin

Stir the two together and mix well. Blender is probably the best way to do this, I just mixed it in a tall mixing cup with a spatula.

In the mouth it becomes liquid again and tastes and feels like oil because it reacts with water - in this case saliva. The powder is ultra-light and gives lots of volume. 25g of it is quite a lot. So light as dust and also makes quite a mess in the kitchen if you handle it like you would flour or starch. So be very, very careful.

And if you're wondering now why you should do this: because you can. Joking aside, I use it to season dishes. As a flavor enhancer. Sauces for roast pork are the hammer with it and also in Asian cuisine it gives in pork sauces still a cool touch. You can also use it to pimp homemade seasoning powders made from vegetables or BBQ rubs. And as already mentioned, it also seasons better in the hot air fryer.
