Fennel and fish or seafood are a classic combination anyway. Here is a recipe with raw marinated fennel.

I cooked the octopus sous vide, deglazed and marinated it in the vinaigrette and served it with some arugula.
Tastes great as a dip or even better as a spread for sandwiches.
