Clear strawberry juice
Experiment 1 with strawberries
2.5g pectinase (Pectin-ex 100 from Schließmann)
20g water
600g strawberries
I dissolved about 20 times the amount of pectinase in water and let it stand overnight. Whether this is necessary, I do not know.
Then I pureed the strawberries with the solution in a blender and then put them 2 times through the juicer. I parked the juice in screw-top jars and let it sit for 12 hours.
Then I first skimmed the juice with a spoon and then put it through a coffee filter. The settled foam I have not poured away but further used. (I link you later below).
The yield is very large.
