Clear strawberry juice

Whether this works in the home? - Jepp. The clarification of juices can be achieved in various ways, e.g. filtering through the Brita filter, through micron filters, tea filters or through enzymes such as pectinase, kieselsol or chitosan (or a mixture as all three.

I have a simple juice centrifuge (juicer) for about 40 euros in use and tried it first with strawberries and pectinase.

Experiment 1 with strawberries

2.5g pectinase (Pectin-ex 100 from Schließmann)
20g water
600g strawberries

I dissolved about 20 times the amount of pectinase in water and let it stand overnight. Whether this is necessary, I do not know.

Then I pureed the strawberries with the solution in a blender and then put them 2 times through the juicer. I parked the juice in screw-top jars and let it sit for 12 hours.

Then I first skimmed the juice with a spoon and then put it through a coffee filter. The settled foam I have not poured away but further used. (I link you later below).

The yield is very large.
