Bean salad

Beans Tonnato - a salad of various beans, with chicken breast and tuna sauce.

Bean salad with chicken breast and tuna sauce

100g Azuki beans
400g Water
400g green beans
400g broad beans (can)
1 red onion
Dressing of your choice

Tuna sauce

1 can tuna in oil
50 ml broth (veal or poultry)
4 anchovy fillets
2 tablespoons capers
8 cornichons
2 eggs
200 ml olive oil
1 tablespoon vinegar
4 tablespoons lemon juice
salt, pepper

Poultry

2 chicken breasts
400g poultry stock
1 bay leaf
1 onion

Soak the azuki beans with the water overnight.

Boil the azuki beans for about 45 minutes.

Cook the chicken breasts in the stock over low heat.

Cook the green beans for 10 minutes.

Stir the dressing and marinate the beans. Please note: you need a powerful dressing

Slice the onion and put it in water.

Boil the eggs hard, rinse them and peel them. Eat the whites, we only need the yolks.

Pick up the tuna and put it in a high mixing bowl with the anchovies, broth, 1 tablespoon of capers, 4 tablespoons of finely chopped cornichons and mash. Mash the egg yolks with a fork and mix them in. Add the vinegar and pour in the oil in a thin stream and puree at the same time. Season carefully with salt, pepper and lemon. Let the tonnato stand for 15 minutes and season to taste.

Mix the finely sliced chicken breast with some tonnato, pass the rest of the sauce.

Mix the beans with a little tonnato, also pass the remaining sauce.

Serve with baguette.
