You'll need to mix 405 or 550 flour, butter and hearty cheese in equal parts to make a smooth dough. Season heartily with salt, pepper and nutmeg. Let rest in plastic wrap in refrigerator for 30 minutes. Roll out and cut out.

Each 100g is enough for one tray.

Topping can be black or white sesame seeds, if you like.

Bake at 160 degrees for 15-20 minutes.
