Fasolakia

Fasolakia - Greek green beans with tomato and feta - topped with roasted almonds - served with feta.

Fasolakia with Feta Cheese

Tomato sauce

2 cloves garlic
1 onion
tomato puree
2 tomatoes
oregano
salt, pepper

Feta

1 feta cheese, organic
50g breadcrumbs
1 sprig thyme,
1 tsp oregano
epper, salt
olive oil

Beans

green beans (frozen) salt savory

Cook the tomato sauce: chop the garlic and onions, saute them without taking color, stir in the tomato sauce, tomatoes and tomato paste. Season with salt, pepper and dill.

Cut the feta into 1cm thick strips. Season the breadcrumbs with thyme and oregano.

Mix the thyme, oregano, a little salt and pepper with the breadcrumbs and turn the feta slices in it until the slices are completely coated with the herb crumbs. Place the breaded slices in a baking dish greased with olive oil and sprinkle or brush with a little olive oil. Bake in a preheated oven at 200 degrees for about fifteen minutes.

Cook the beans in boiling water with a little salt and savory, and after 5-8 minutes, rinse them ice cold, hoping they will stay green.

Warm the beans in the tomato sauce and serve with the feta.

Tip

Put the breadcrumbs in the fridge - this way you can tease out resistant starches, even if just a little. Saves a few calories.
