Blue Tea - Mocktail
45g maple syrup (alternatively date syrup or lute sugar- if you like it more neutral)
30 lemon juice
90g water
2 egg whites
1 pinch turmeric (for color)
4g Blue Tea flowers 400g water
Boil the water and pour over the blossoms. Let the tea cool completely.
Whip the egg whites with a hand blender and turmeric and add to an ISIā¢ bottle with syrup, lemon juice (strain fresh through a sieve) and water. Shake 4x and refrigerate the bottle for 30 minutes. Test in a glass with a small amount to see if the mixture fits. Shake again if necessary. It is best to shake in 1x increments until the consistency is ok.
To serve, pour the Blue Tea into glasses and top with the foam.
