Crispy potato sticks

Crispy potato sticks for appetizers with aioli or other dips of your choice. You can flavor the oil according to your taste. Neutral oil also works.

Potato sticks

For one baking tray, more like 4 servings

600g potatoes, preferably firm or floury
5g salt, 6 turns pepper
80g potato starch/potato flour
Salt for the cooking water
Seasoning oil for coating (chili oil, rosemary oil...)

Peel the potatoes, cut them into equal-sized slices and boil them in well-salted water until done. Drain the potatoes and let them steam briefly.

Preheat the oven to 180.

Mash the potatoes with a whisk or a potato ricer. Mix the potatoes with salt, pepper and starch and form finger-length and not too thick sticks, which you put on a baking tray lined with baking paper.

Coat them with a seasoning oil of your choice and bake the potato sticks in the oven for about 30 minutes. After 15 minutes, brush them again with oil. The last 5 minutes you can grill them under the salamander if they are not browned yet.

They can be served with any dip you like. The potato sticks also taste good cold, but warm is really better.
